Produced on our farm, not far from our agriturismo, the Etruscan green gold embodies the values of tradition and innovation. The farm covers 10 hectares spread across Tolfa, Bracciano, Canale Monterano, and Cerveteri. The primary production area is EVO oil.
Natural Farming
Natural Farming is fundamental to maintaining and continually increasing the fertility of the land. It is based on four principles: no tillage, no chemical fertilizers, no weed control, and no dependence on chemicals.

Extra Virgin Olive Oil
Extra virgin olive oil is the juice of olives and is rich in antioxidants, including vitamin E, oleic acid, and polyphenols. It is an excellent natural product, typical of the Mediterranean region. It can be described as an elixir of long life, promoting overall well-being, protecting the cardiovascular system, and promoting the development and maintenance of the nervous system, making it extremely useful in early childhood—the lipid composition of extra virgin olive oil is similar to breast milk—and has a beneficial effect on the gastrointestinal system and the osteoarticular system, and promotes a healthy metabolism.
According to an ancient myth, the olive tree is a divine gift to the craftsman from the goddess Minerva Athena, goddess of wisdom, justice, and war strategy, and protector of the arts and sciences. The olive tree, which grew on the Acropolis, became a sacred plant, and Minerva became the protector of the city of Athens. The olive tree is an ancient, evergreen tree with a remarkable capacity for self-regeneration. It is a symbol of peace, eternity, wisdom, and the connection between humanity and heaven. Olive oil, in its various forms, has always been used by humans for food, for warmth and light, as a base for medicinal remedies, perfumes, and cosmetics, and to facilitate wool spinning and weaving.

The olive tree’s leaves are also excellent, boasting antioxidant and anti-free radical properties, as well as toning and soothing capillary vessels and promoting skin regeneration. Olive leaf infusion is known for its many health benefits, including regulating blood pressure, increasing arterial elasticity, thinning the blood, and regulating lipid metabolism. Extra virgin olive oil is excellent raw on salads, meat, fish, and fruit. It should be used daily in the correct amount, recommended by nutrition experts at about 3 tablespoons per day (approximately 30g). It is also excellent in the kitchen for preparing any dish, including desserts. It is also suitable for frying because of its very high smoke point.
